Executive Chef, Menu Developer - Gate Gourmet Nordics
We are looking for an Executive Chef to join our Menu Development team. Gate Gourmet is operating in seven airline catering production units in Denmark, Sweden and Norway. The position will be based in Copenhagen, Denmark.

You must have a great passion for food and for giving our customers a great food journey.

Job Summary:
  • Building up and maintain culinary expertise at Gate Gourmet Scandinavia as part of the Menu Development team.
  • Prepare, take part in Menu Presentations for key customers:
Secure customer expectations are met in terms of presentation set-up, product innovation, product range, correctness of menu specifications and culinary expertise.
  • Continuously improve the overall menu development process i.e. product standardization and simplification, product innovation and menu presentation format.
Main Duties and Responsibilities:
  • Actively engage with the customer and understand their needs and requirements.
  • Develop and build up new menus and recipes for menu presentations, workshops etc. in cooperation with colleagues.
  • Buildup and change recipes for current and upcoming rotations (menu cycles) in cooperation with the commercial, procurement and local production teams.
  • Ensure close collaboration with the broader teams to deliver customer expectations and Account Manager to secure the product overall profitability, maximizing revenues, and new business opportunities with the customer.
  • Oversee internal quality assurance checks versus approved specification/recipes and immediately makes changes where necessary.
  • Involvement with menu presentations, tenders and workshops as and when required.
  • Analyze performance information, identify issues and solutions and report on progress as required (daily, weekly, and monthly).
  • Ensure full understanding and follow legislative requirements in line with International Food Safety, Health and Safety, Security and Environment controls.
Qualifications and education:
  • Degree: Educated chef.
  • Completed vocational training in culinary and related hygiene course.
  • Management/Leadership qualification is an advantage.
  • Good interpersonal and communication skills.
  • Profound knowledge of product development and production techniques, preferably in the airline catering and/or similar industries.
Work Experience:
  • Extensive experience in managing a large-scale food manufacturing department.
  • Qualified Chef including Global Food experience preferable with in-flight catering.
  • Extensive experience in managing teams within the food industry.
  • Experience of managing budgets, financial and performance targets.
Language / Communications Skills:
  • Read, write, and speak a Scandinavian language and English.
Other
  • Most of the work for this position will be carried out during normal office hours
  • Travel to be expected in Scandinavia and the Nordics.
